Awesome, Grown-Up, Hippie-Dippy Granola

I got a great recipe for granola from a famous bakery in Los Angeles last year. I have fiddled with it so much, this is now my recipe. Besides, I've conveniently forgotten the name of the bakery. I even put this granola on top of salads!

This recipe is high in complex carbohydrates and good fats (well, except for the naughty shredded coconut). A little bit goes a long way. Makes a lot; give some away as gifts! Will keep one month.

Awesome, Grown-Up, Hippie-Dippy Granola

4 cups oats
1/3 cup honey
1/2 cup canola oil
1 tsp. vanilla
1/4 tsp. salt
1/2 tsp. cinnamon
1/4 teaspoon nutmeg
1/3 cup shredded coconut
1/4 cup sunflower seeds
1/3 cup almonds, chopped or slivered
1/3 cup sesame seeds
1/4 cup pumpkin seeds
1/4 cup flax seeds
1/4 cup raisins and/or other dried fruit like cherries or apricots, chopped

Preheat oven to 325 degrees. Mix oil, honey, vanilla, salt, cinnamon, and nutmeg together.

Combine all other ingredients in large bowl. Pour honey-oil mixture over all and toss very well to cover as much as you can.

Bake on baking sheet approximately 30 minutes, tossing every 10 minutes. Watch it very carefully. At first it will go slowly, get a little moist and steamy. Then it will brown very quickly. Granola is finished when it is golden brown. Remove from oven and continue to toss every 10 minutes while cooling to pre- vent sticking to pan and lumping together too much. Add raisins. Store airtight.
