Mrs. Keene's Apple Crumble, 1955

Thu, 12/08/1955 - 12:43

This good apple dessert comes from Mrs. Charles L. Keene of West Poland, Maine. Slice five or six tart apples into a casserole. Pour over them one half cup of orange, pineapple, or apricot juice. Dust freely with cinnamon and dot with butter.

Mix together three-fourths of a cup of sifted flour and a little salt, one cup brown sugar, and three tablespoons of butter.

Spread this over the apples and bake in a 350 degree oven until the mixture is brown and bubbly. Serve warm with ice cream.

Mrs. Keene writes, “I like Northern Spies best." So do I, but it is difficult to get Spies today, and this dish is good with any reasonable tart apple. I’m a booster for more puddings and apple combinations of the right ingredients hit the spot with me. Try heavy cream on this crumble, and mix just a whiffle of cinnamon and nutmeg into the cream.
