Jean Pascal from Troncones, Mexico, and Paul Roman, a chef from Montauk, were invited to cook at the International Paella Fest in Zihuatanejo, Mexico.

News From Mexico

Paul Roman, a private chef based in Montauk with extensive restaurant experience in New York City and on the East End, returned recently from Zihuatanejo, Mexico, where he had been invited to cook in that city’s seventh International Paella Fest. He and his friend Jean Pascal, the chef at Mi Jardin in Troncones, Mexico, were among the 25 to 30 chefs, restaurants, and hotels that took part in the event, which was attended by some 450 people.

Mr. Roman has been the executive chef at Fraunces Tavern and Cafe des Artistes in Manhattan, at the Laundry in East Hampton, and at the Montauk Yacht Club, Gurney’s, and After Fishing in Montauk. In addition to his private chef work, he is working now with several caterers, among them Hampton Clambake and Food and Company.
