Paola's Is Gearing Up for Pantigo

Stefano Marracino is getting ready to bring Paola’s, the popular New York City restaurant he runs with his mother, to Pantigo Road.

Paola’s, the Italian restaurant taking over the space formerly occupied by EMP Summer House on Pantigo Road in East Hampton, will open by Memorial Day weekend, Stefano Marracino, the owner, said on Friday. 

The eatery, an offshoot of the Upper East Side restaurant his mother, Paola Bottero, launched in 1983, will feature traditional Northern Italian fare such as spinach and ricotta dumplings, cacio e pepe, and pan-fried artichokes, as well as pizza prepared in a wood-burning oven. For those with dietary restrictions, gluten-free pasta will also be available. 

Mr. Marracino said the restaurant will take advantage of its new location and offer more seafood dishes than its city counterpart, and the menu will include plenty of vegetarian options. The atmosphere, he said, will be casual, and he’s looking forward to making the most of the restaurant’s backyard dining area. If the East End branch of Paola’s proves popular, said Mr. Marracino, he would be eager to keep it open beyond the summer season. “I’ve already hired a general manager for a year,” he said.
