Pasta With Turkey Sausage and Peas

Serves 14 to 16 people.

 

4 tbs. olive oil

2 lbs. turkey sausage, removed from casing

1 package frozen peas

2 lbs. pasta (whole-wheat bow tie or penne)

2 cloves garlic

1 small package mushrooms sliced (optional)

1/2 cup finely chopped onion

3 tsp. Italian seasoning (or oregano or basil or both)

Salt and pepper to taste

Parmesan cheese to taste

 

While cooking pasta, add two tablespoons of olive oil to pan, add sausage and cook until just done. Remove from pan. Add remaining two tablespoons of olive oil to pan and sauté onion and mushrooms for a few minutes. Add garlic and sauté for a few more minutes. Return sausage to pan, season with Italian seasoning and a little salt and pepper. Add peas, stir and cover. Let simmer until peas are cooked through.

Drain pasta, reserving some of the pasta water. Combine pasta and sausage mixture, adding a little pasta water if it is dry.

Serve with Parmesan cheese.
