Breadzilla Is Going Strong

Breadzilla’s Butter Cookie Dough for Cutouts

“I think it’s the cornstarch that makes this dough so easy to work with,” Nancy Hollister writes. “It’s really indestructible, yet light and crisp and buttery!”

 

1 cup all purpose flour

1 cup pastry flour

1 cup confectioners sugar

1 cup cornstarch

3/4 pound unsalted butter

1/4 tsp. salt

 

Soften the butter, put it in the KitchenAid stand mixer with a paddle attachment. Sift the dry ingredients together, add to the butter, and mix on a low speed until you have dough. It would probably also work in a Cuisinart mixer. 

 

Breadzilla’s Rib Rub

Naturally, this makes a huge amount. Since this would keep well for a long time in an airtight container stored in a cool, dry location, you can go ahead and make the full recipe, and maybe give some away to friends, or quarter it.

8 cups brown sugar

4 cups white sugar

6 cups kosher salt

1 cup paprika

1/2 cup cayenne

1 cup garlic powder

1/2 cup ground celery seed

2 cups onion powder

1 cup cumin

1 cup coriander

1/2 cup cocoa powder

1/2 cup black pepper

1/2 cup white pepper

1/2 cup chipotle powder

1/2 cup dry mustard

 

Combine all ingredients and store in airtight container in cool, dry place.
