Senator Klobuchar’s Taconite Tater Tot Hot Dish

                  Here’s a doozy from Minnesota: the state dish.

                  Serving size not given. I am afraid to guess.

 

                  11/2 lbs. ground beef

                  1 can cream of mushroom soup

                  1 can cream of chicken

                  1 small onion

                  Garlic, couple cloves

                  Salt

                  Pepper

                  8-12 oz. pepper jack cheese

                  1 package Tater Tots

 

Brown ground beef and drain off fat. Sauté onion and garlic.

In a large bowl, mix together beef, onion, garlic, both cans of soup, salt, and pepper. Spread evenly into the bottom of a 9-by-13-inch baking dish. Cover with half of the cheese, then place Tater Tots in one layer over the entire pan. Bake at 450 for 30 minutes or until Tater Tots are crisp. Cover with remaining cheese and bake until cheese melts.

 

Shave Ice

This is just a blueprint recipe for shave ice. I think you can just use your imagination with this. Some recipes suggest using powdered drink mix to make the syrup,some suggest using juicy fruits like mango, peaches, strawberries, pineapple, etc. You can eat shave ice with a spoon, or a straw, or both. Some people put the shave ice on top of vanilla ice cream, some people put a drizzle of sweetened condensed milk over the top. 

 

To make each portion of shave ice, put two cups of ice cubes into a good blender or food processor. Crush/blend until it is snowy. Top with approximately a quarter-cup of fresh fruit syrup or concentrated fruit drink mix. Serve immediately and dream of Hawaii!
