Fish27, which opened in the spring, promises the freshest of the fresh. Derek Miller, one of the owners, used to work at Inlet Seafood in Montauk and has Tony Minardi, a marine biologist who founded what used to be Claws on Wheels and is an old-hand at clambakes, as catering director. Mr. Miller's father, Jay Gold, is also helping get Fish27 started. Mr. Miller's idea is to add some lunchtime standards and a few groceries to complement prepared specialties like shrimp scampi with pasta. Anthony Petty is the chef.
