This tiny Water Mill restaurant's carefully prepared menu changes according to the whims of its owners, Merrill Indoe and Peter Robertson, but one thing doesn't change, its $52, five-course prix fixe. With only 16 seats, Dish has to be reservation-only, and the place is so well-loved that some fans will put their names in for tables for Saturday night for the whole summer.
