Cafe Max is in a dollhouse of a building on Montauk Highway at the western edge of East Hampton Village. There is just enough space for a bar and about a dozen tables. Its steady, year-round patrons find the owner-chef's cooking top-notch. The medium-size menu leans toward fish and the wine list is a good one. Salads, such as roasted peppers with anchovies and goat cheese, are recommended. Many homemade desserts top off the carefully prepared entrees, which tend to include lots of well-prepared fish. There is rack of lamb on Friday and Sunday and a 1-pound black angus rib-eye steak every night it is open.
